Over the last 4 years I have pretty much fallen head over heals with simple cooking. I used to be the one that loved to be in the kitchen all day, slow roasting garden grown tomatoes for homemade tomato sauce and labouring over cakes that took 2 days to make and assemble. 
That girl is gone! Once my daughter was born, my life changed. I have so many different priorities and I prefer to spend time with my family instead of spending that time in the kitchen cooking. 
So, I embraced simple cooking. Shortly there after I fell head over heals in love with my  slow cooker.  I started with simple sides. I made caramelised onions, apple butter and several other meals.

Then, one day I was talking to my friend and she told that I can make the easiest dinner ever by tossing in a jar of salsa with some chicken.  I said, what?  Just salsa and chicken? So I gave it a try. Well, after several tests I came up with the most amazing simple dinner and it is a go to in my house. When you are working with 2 ingredients you really want them to be the best ingredients you can find. Whether that means homemade salsa or store bought is up to you. But, I have a few tips.

First and foremost, if you can use homemade salsa I recommend it. There is nothing better than homemade. My go-to is Lazy Day Salsa on our website. If you Google "Slow Roasted Lazy Day Salsa" it will come up for you. It is thick and chunky and customisable to what you prefer. Super easy too.

There are some days that require store bought salsa, and believe me I have those days too. I have a favourite store bought salsa. Rojo's Salsa Fire Roasted Medium is the best! It is found in the deli/produce area at the grocery store. I actually use it all the time for chips and salsa and would absolutely serve it to guests if I couldn't make mine. Whatever you choose, go with whatever works for you.

Because, honestly this salsa chicken is absolutely amazing!!! I have served it on flour tortillas, over rice and on a bed of lettuce. It is amazing no matter how you eat it. 
2-Ingredient Salsa Crockpot Chicken is so easy it just about cooks itself. Just toss the ingredients in your favourite  slow cooker. Cover and cook on high or low for the specified time. Then use either 2 forks or these handy meat claws to shred the chicken. Check out more of my  Slow Cooker Essentials.  Then simply serve!

2-Ingredient Crockpot Salsa Chicken

Serves 8 | Active Time 2 Min | Total Time 4 Hours 2 Min 
2 pounds boneless skinless chicken breasts 
15-16 ounces your favorite salsa 
Place chicken breasts on the bottom of the slow cooker. Pour salsa over top. 
Cover and cook for 3-4 hours on high or 6-8 hours on low.  Once cooked through, use 2 forks or meat claws to shred chicken. Season with salt and pepper to taste. Mine usually needs just a pinch. 
Serve and enjoy! 
DONNA'S TIPS: 
My family loves flautas (flour taquitos). So, I took the left over salsa chicken and mixed it with cream cheese and Colby Jack and rolled it up.  Froze it and when I am ready to make it, I pop it in a preheated 425°F oven for 20 minutes, until tortilla is crisp and the ends are beginning to brown and cooked through and my family goes crazy over them! 
To freeze for later use:  Prepare taquitos as described.  Place taquitos in a resealable freezer bag (1 gallon works great) and store until ready to use. 
They keep well for 6 months.  
I prefer my Lazy Day Salsa (recipe on TheSlowRoastedItalian) and Rojo's Fire Roasted Medium Salsa.
