Summer is in full force, which means that not only are we on summer vacation, but our ovens are taking a break too! Just because it’s 100+ degrees outside doesn’t mean you can’t make fabulous desserts.  I'm sharing some wonderful no-bake desserts that you can make anytime, anyplace! 

Have you ever made desserts in a jar? They are one of my most favourite treats to whip up in the summer.  Mason jars make great party presentations and you probably have a bunch in your kitchen cabinets right now. If you can’t find jars or don’t want to use them, stemless wine glass , drinking glass or  clear plastic cup will work. 

These no-bake desserts are perfect for a summer party, a  picnic, or gulping down while watching a movie. Or all three!

Chocolate Peanut Butter Brownie Dessert

What you'll need:
  • Ready made brownies
  • ¼ cup peanut butter
  • 1 can can cream cheese frosting
  • Peanut M&M's
  • Chopped nuts
  • Round cookie cutter (optional)
  • Your favourite candy bar (optional for top of dessert)
DIRECTIONS
  1. Cut the brownies into small pieces.
  2. Using a round cookie cutter is easy and makes the brownie fit perfectly in a mason jar.
  3. Mix ¼ cup of creamy peanut butter and the frosting together in a bowl.
  4. Layer the brownies, icing and M&M's into a jar. Let the icing be the last layer.
  5. Top with chopped nuts and small piece of candy bar. If serving at a party, add a cute wooden spoon or fork to the jar with washi tape.

Rainbow Fruit Parfait

What you'll need:
  • 1/4 cup vanilla yogurt
  • 1/4 cup granola
  • 4-5 Strawberries sliced
  • 1 clementine peeled and cubed
  • 1 kiwi cubed
  • A handful of blueberries
DIRECTIONS
  1. Fill a clear glass or mason jar with granola. (Leave a little for garnish)
  2. Layer strawberries, clementine, kiwi and blueberries on top of granola.
  3. Use a spoon to gently create a hole inside the fruit.
  4. Spoon yogurt between the fruit, then add some on top.
  5. Sprinkle the top with granola.

Banana Pudding Trifle

  • 1 sliced banana
  • 2 cups banana pudding
  • whipped cream
  • 2 cups  cracker crumbs
  • Half-stick of melted butter
DIRECTIONS 
  1. Mix the graham crackers with the melted butter.
  2. Place into the bottom of your jar to form the crust. 
  3. Layer graham cracker crumbs, pudding, banana and whipped cream in a jar.
  4. Repeat.  
  5. Refrigerate and serve col

Chocolate Oreo Trifle

DIRECTIONS 
  1. Layer pudding and crushed Oreo cookies ending with the cookies.
  2. Top with blueberries, an Oreo cookie and sprig of mint.
  3. Refrigerate  and serve cold.

Cherry Cheesecake

  • 2 cups cracker crumbs
  • Half-stick of melted butter
  • 1-1/2 cups heavy cream, cold
  • (2) 8 ounce blocks cream cheese, room temperature
  • 1-1/2 cup plain greek yogurt
  • 1 cup confectioners powdered sugar
DIRECTIONS
  1. Cherry pie filling (or the fruit topping of your choosing)
  2. Use a mixer with a whisk attachment or in a large bowl with a hand mixer, beat the cream on high for about 3-5 minutes until peaks form.
  3. Spoon the whipped cream to another bowl and set aside.
  4. In a mixer, combine the cream cheese, greek yogurt and powdered sugar together. Start at a low speed, then slowly increase the speed to high as you add the powdered sugar.
  5. Beat for a few minutes until creamy.
  6. Add half of the whipped cream to the cream cheese mixture and stir to combine.
  7. Add the other half of the whipped cream, and gently fold it in. 
  8. Mix the crackers with the melted butter.
  9. Place a large spoonful into the bottom of your jar to form the crust.
  10. Press the crust firmly into jar with the back of a spoon.
  11. Spoon a large helping of cheesecake over the crust.
  12. Top with cherries or the fruit of your choosing.
  13. Cover with lid and refrigerate for at least an hour, serve cold.
