I always have a few boxes of brownie mix on hand. As much as I love homemade brownies, a mix is great for a quick dessert! They are also the easiest mixes to doctor -- you can add toppings, fillings, cook them in a cupcake tin or crumble them up in a trifle. Here are my favourite ways to doctor brownie mix:
Caramel Filled Brownies
Prepare TWO boxes of brownie mix as directed on box. Spread half of mix in prepared pan and bake at 350 for 20 minutes. Remove from oven and top withMilky Way Simply Caramel Bars. Spread the other half of brownie batter on top and bake for 25 minutes or until set.
Mallow Filled Brownies
Prepare brownie mix as directed on box for CAKE LIKE brownies. Line 12 muffin tins with liners and fill halfway with brownie batter. Gently press a Mallow Cup into the batter and top with a spoonful of brownie batter. Bake at 350 until set.
Heath Bar Trifle
Layer crumbled brownies with whipped cream, crushed Heath Bars and caramel sauce. Serve in jars or a large trifle dish.
Cream Cheese Brownie Cupcakes
Line 12 muffin tins with paper liners. Prepare brownie mix as directed on box for CAKE LIKE brownies. Fill prepared cupcake tins evenly with batter. In a separate bowl, blend 8 ounces softened cream cheese, 1 large egg, 1/2 cup granulated sugar, and 1/2 teaspoon pure vanilla extract until smooth. Fold in 1/2 cup mini chocolate chips. Place a spoonful on top of each tin of batter. Bake at 350 until baked through, about 30 minutes.
Snickers Cheesecake Brownies
Prepare brownie mix as called for on the box. Fold in some chopped Snickers bars. Spread batter evenly in prepared pan. In a separate bowl, mix 8 oz softened cream cheese, 1/2 cup granulated sugar and 1 large egg with your electric mixer until smooth. Spoon over brownie batter, then swirl with a knife. Bake at 350 for 30 minutes or until firm.
Caramel Krispie Brownies
Prepare and bake brownies according to box directions. Immediately upon removing from oven, top with mini marshmallows and place back in the oven for several minutes -- until marshmallows are puffy. Remove from oven and let cool for several minutes. In the microwave, melt 11 oz caramel bits (or 11 oz regular caramels) with 1 TBS water, stirring ever 30 seconds until smooth. Pour evenly over marshmallow, then immediately top with puffed rice cereal, gently pressing into the caramel. Let cool completely.
Classic Fudge Brownies
Prepare TWO boxes of brownie mix, stirring in a jar of hot fudge sauce. Bake until set. Frost warm brownies with a can of chocolate frosting. Let cool, then refrigerate until firm.
Mississippi Mud Brownies
Prepare and bake brownies according to box directions. Immediately upon removing from oven, top with mini marshmallows and place back in the oven for several minutes -- until marshmallows are puffy. Remove from oven and top with chopped pecans. Place a can of chocolate frosting in the microwave with the lid and foil removed. Microwave, stopping to stir every 20 seconds, until pourable. Drizzle over brownies. Let cool and then serve.
