I have been on a major snack food kick lately. I mean, honestly, I’m not usually much of a crisps or pretzels kind of girl. I don’t do a ton of snacking between meals, but the last few weeks? Gimme all the crisps. Gimme all the biscuits. Gimme all the snacks! I’m not sure what’s wrong with me, but it’s been a tasty couple of weeks. 

I finally ran out of junk food in the house, so I had to get creative if I wanted my nightly fix of goodies. 

I set out to make something a little different. I mean, everyone loves a good Chex mix, right? 

Well, I had boxes and boxes of cereal in my cupboard, left over from the last time I made my salty, savoury Chex mix. I thought I’d use those up, but this time with a little cinnamon sugar twist!

This brown sugar and cinnamon Chex mix is so deliciously different. I love how it’s just lightly sweetened, perfectly crunchy and not too terrible for you as far as snacks go. 

I think you’re really going to love the pretzels in this one. The salty and sweet combo is one of my favourites! 

I make my Chex mix in the microwave which keeps things super quick and easy. You’ll go from start to finish in about 15 minutes. 

Plenty of time to whip this up in the evening and then veg out in front of the TV while munching on a few handfuls of this!

Feel free to double or triple this recipe as needed. My kids and I ploughed through a batch of this in just a couple of days. If you’re serving a large amount of people, definitely plan accordingly! This stuff is a little addictive! 

Coconut sugar makes a great substitute for the white and brown sugar. It has a similar flavour to brown sugar and is a bit healthier! I love to keep it on hand.

Ingredients

Directions

  1. Add the cereal, nuts and pretzels to a large microwave safe bowl.
  2. In a small saucepan, melt the butter.
  3. Sprinkle the white and brown sugar and cinnamon over the cereal mixture and pour the butter over the top. Stir well to coat.
  4. Microwave on high for 1 minute. Stir again to coat.
  5. Spread the mixture on a paper towel lined baking tray to cool.
  6. Store in an airtight container.
