In our opinion, the most crazily awful thing about eating is that it's so hard not to do it all the time, and we so wish we could! Even with all the cooking we do at home, our eyes and our stomachs are always ready for a snack between meals, or a quick bite right after the gym, or pig-out session on a long road trip. For those times, we fairly often turn to protein bars, which have two great advantages over other snacks: first, they're easy to eat with one hand while the other is busy texting, typing, or taking your dog for a walk, and second, they're jam packed with nutrients your body can actually use, so you can feel really good about saying no to those omnipresent and super tempting sugary snacks we eat only in the secrecy of our own homes.

What's even more satisfying than having just any old protein bar is having one you've actually made yourself. After eating our way through just about every possible flavour of protein bars that are currently available, we decided to get creative and make our own. The result? White chocolate. Pistachio. Protein Bars. They are the best thing literally ever. Maybe I'm being a bit dramatic. But really, check them out below and see for yourself!

Pistachio White Chocolate Protein Bars

  • 1 cup roasted pistachios
  • 1 1/2 cups rolled oats
  • 1/3 cup agave nectar
  • 3 oz whey protein 
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup white chocolate chips (optional but you totally should)
Line a 9x9" brownie pan with  parchment paper and set aside.  

Measure out  1/4 cup of the pistachios, give them a good chop, and set aside for the topping. 

In a  food processor, combine the remaining pistachios and salt and process until you have something resembling pistachio butter that sticks together when pinched. 

Add the oats, protein powder, cinnamon, and agave nectar and puree until smooth. 
Press the mixture into the prepared pan with a spoon or your hands. 

Place the white chocolate chips in a  microwave-safe bowl and give a little 30 second spa session in the microwave before whisking with a fork until smooth and drizzling over the bars. Top with the chopped pistachios and let set in the fridge for about 30 minutes. 

Remove from the fridge and cut into desired shapes. Enjoy!
