Epic Chicken Salad. That's what I called this recipe today because it will blow your minds at how delicious and healthy it is. 

Chicken salad in and of itself can be super boring and rather monotonous, but I thought about lightening it up and making it shockingly healthier with the addition of lots of veggies!  Ok, not lots of veggies....like, 3. But still! It's a lot more than others. And, if you gardeners out there still have lots of zucchini to get rid of, this is the perfect way! It goes totally undetected and you can't even notice it's there. One other pleasant surprise is my use of greek yogurt. I use a little mayonnaise for flavor but substitute the remaining with plain greek yogurt. You honestly can't tell the difference and as long as you season it with enough salt, you'll be able to fool friends and family.  

Incase you are not aware, I LOVE tricking people {just my kids mostly}  into eating things they think are going to be gross...mostly veggies at my house.And 99% of the time, it works. Mwahahahaha!!! 

Anyways, here's how to make this fabulous lunch or snack! It will blow your minds!

Remember all that zucchini talk? Well, this recipe starts with grating a whole bunch of it in a food processor. I have a Cuisinart food processorand it works wonders.  Feel free to use a box grater and ring out any excess moisture.

Once the zucchini is drained, add it to a  large bowl with shredded chicken, diced onion and celery, a little mayonnaise and a little more nonfat greek yogurt.  Sprinkle in some salt and  freshly ground black pepper and stir.

You may need to add in a little more yogurt depending on how dry your chicken was, but that is a decision you can make when the time comes.  Stir all the ingredients  together with a  spatula, taste and adjust seasonings.

Throw this mixture onto some bread, dip veggies or crackers into it or enjoy it completely on its own. No matter how you eat this, you will not be disappointed!

Epic Chicken Salad


Ingredients: 
1 small zucchini, finely grated and wrung out  
2 large stalks celery, finely chopped  
1/2 small onion, finely chopped 
2 cans chicken, drained {I used 2-12.5 oz. cans} 
1/3 cup nonfat greek yogurt 
1/4 real mayonnaise 
salt & pepper, to taste 

Directions: 
Place all ingredients into bowl and stir until combined. Taste, adjust seasonings and serve as desired. I LOVE dipping crackers into this little concoction.  Cover and store in refrigerator for up to 5 days {these covered bowls are GREAT for this}.
