These 2 Minute Frozen Parfaits are a great dessert any time of the year, but they are absolutely heavenly on a hot summer day! Who really wants to heat up their kitchen when temperatures are soaring? Not me!     

Honestly, you won't believe how amazingly simple these parfaits are to create and the flavour and combination choices are endless!!! PLUS... you can make them days in advance. Simply grab one out of the freezer whenever you are ready for a scrumptious treat, or for those times when unexpected guest show-up at your door!  Seriously! How awesome is that?  

Let me show you how I made five different flavours of delectable parfaits.

My story starts with leftovers!

Right now it is rhubarb season where I live and over the past couple weeks I have been busy making several batches of Rhubarb Strawberry Pineapple Freezer Jam. It's a wonderful recipe that has been passed down in my family through the generations. 
(You can find the recipe and full tutorial on our blog.) Since this recipe is so yummy, everyone fights over the last jar of jam! (No joke!) This year I decided to make a few extra jars of the delicious stuff. I started by using eight, pint-size,  Ball canning jars, but quickly purchased twenty more! (You can never have too much jam, right?) After filling a total of twenty-three jars with jam, I ended up with five empty jars. Hmm... I asked myself, "Now what can I do with five empty pint-size ball canning jars?"  Then it occurred to me. Fill the jars with something sweet, creamy, crunchy and frozen! Ta Da! So now you know the back-story of how these 2 minute frozen parfaits were born.  

With the five empty jars in front of me I quickly gathered my ingredients, which interestingly enough, were all leftovers and supplies I had on hand. Items such as an opened bag of M&M's, an almost empty container of colourful  rainbow sprinkles, an opened box of cereal, part of an  organic dark chocolate bar, a hand-full of  organic pecans , Heath Bit candy, a partial box of gluten free animal crackers and more. I also had several tubs of various flavours of ice cream, along with a few chocolate cupcakes and part of angel food cake in my freezer that were all leftovers from a birthday party.  

Perfect! Let the fun begin!!!

Now that I had my ingredients close at hand, I started  layering the parfaits. You can use ingredients such as cake, brownies, cookies, crushed cereal, digestive biscuits and more to make your base. Then I added a layer of sweets and sprinkles, chopped nuts, peanut butter, fresh fruit, cookies, whipped cream and more. Feel free to use some of your leftover homemade goodies (like I did) or use bakery and/or pre packed items from the shops. Your parfaits will taste great either way. 

The next layer was made by adding ice cream or frozen yoghurt and whipped topping.   I repeated the layers and garnished each parfait with a final dollop of whipped topping and a sprinkle of additional toppings and to some I added a drizzle of chocolate/caramel sauce. 

It's easy to tweak the ingredients to suit any   special dietary restrictions. Since there are several in my family that must be on a  gluten free diet (myself included), I made two of the parfaits gluten free. You can easily create any parfait to be dairy-free, low-fat,  low-carb, vegan or paleo; simply modify your ingredients.

Strawberry and Angel Food Parfait

Layer the following in a pint-size jar:
  • Angel food cake chunks
  • Fresh strawberry slices
  • Neapolitan ice cream
  • Whipped cream
  • Repeat layers
  • Garnish with dollop of whipped topping and strawberry slice
  • Freeze until ready to serve

Variation Suggestions:
  • Replace angel food cake with white or yellow cake
  • Replace strawberries with fresh raspberries, peaches, bananas, kiwi or cherries (or a combination of fresh fruit).
  • Replace Neapolitan ice cream, with Raspberry Cheesecake ice cream, Strawberry Truffle gelato or your favourite berry flavoured low-fat yoghurt

Salted Caramel and Pecan Parfait

Layer the following in a pint-size jar:
  • Chocolate cake crumbs
  • Chopped pecans
  • Salted caramel sauce
  • Vanilla Bean ice cream
  • Whipped cream
  • Repeat layers
  • Garnish with a dollop of whipped cream, chopped pecans and a drizzle of salted caramel sauce
  • Freeze until ready to serve

Variation Suggestions:
  • Replace chocolate cake with chocolate brownies or Oreo cookies
  • Replace Vanilla Bean ice cream, with Chocolate Chunk Cookie Dough, Chocolate Chip, Oreo Cookies and Cream, Snickers ice cream, Salted Caramel Truffle gelato or your favourite flavour of dairy free yoghurt
  • Replace pecans with chopped walnuts, pistachios, peanuts or almonds

Gluten Free Animal Cookie and Candy Parfait

Layer the following in a pint-size jar:
  • Crushed gluten free animal biscuits
  • Gluten free M&M's and gluten free sprinkles
  • Gluten free chocolate and vanilla bean ice cream.
  • Freshly whipped heavy cream
  • Repeat layers
  • Garnish with dollop of whipped cream, M&M's and sprinkles
  • Freeze until ready to serve

Variation Suggestions:
  • Replace animal biscuits with other gluten free cookies such as Udi's gluten free Snickerdoodles or granola,  gluten free Chocolate Rice Chex, or Glutino gluten free chocolate chip cookies.
  • Replace ice cream with Breyer's gluten free Butter Pecan, gluten free Coffee, gluten free Vanilla Fudge Swirl, Kemp's Strawberry frozen yoghurt or other gluten free flavours of ice cream, yoghurt or gelato.
  • Replace M&M's and sprinkles with other gluten free sweets such as a chopped Milky Way, Smarties, Skittles and more.

Peanut Butter and Chocolate Parfait

Layer the following in a pint-size jar:
  • Crumbled chocolate cake
  • Peanut butter, softened in the microwave for 10 seconds
  • Crushed Heath Bit sweets
  • Moose Tracks ice cream
  • Whipped cream
  • Repeat layers
  • Garnish with a dollop of whipped cream, crushed Heath Bit sweets and a drizzle of chocolate ice cream topping
  • Freeze until ready to serve.

Variation Suggestions: 
  • Replace chocolate cake with peanut butter and/or chocolate chip cookies or brownies.
  • Replace Moose Track Ice Cream with Chocolate Chunk or Peanut Butter Fudge ice cream or yoghurt. 
  • Replace Health Bit sweetss with chopped peanuts and dark chocolate curls

Gluten Free Vanilla Bean Parfait

Layer the following in a pint-size jar:
  • Crushed gluten free Rice Chex cereal
  • Gluten free dark chocolate bar, shaved
  • Drizzle of HERSHEY'S syrup
  • Breyer's gluten free Vanilla Bean ice cream
  • Repeat layers
  • Garnish with a dollop of fresh whipped heavy cream and gluten free chocolate shavings
  • Freeze until ready to serve

Variation Suggestions:
  • Replace Rice Chex with any gluten free dry cereal, granola, cake, cookies or biscuits
  • Replace Vanilla Bean ice cream with Breyer's gluten free Butter Pecan, Black Raspberry Chocolate, Butter Almond, or Mint Chocolate Chip ice cream
  • Replace shaved chocolate with gluten free chocolate bars such as Almond Joys, Butterfingers or Snickers

Consider hosting a taste testing parfait party for your family and friends. Create a parfait assembly station and let each person create their very own parfait. Have a variety of toppings, a selection of cakes, cookies, granola, dry cereal and different flavours of ice cream and frozen yoghurt. Don't forget the whipped cream!
