Fat free chinese style chicken curry recipe;

This is great alternative to takeaway, its easy to cook, takes a small amount of time, is fat free and therefore guilt free & healthier plus its fun to make!
Ingrediants:
2 Large white potatoes                                          2 chicken stock cubes
1 large onion chopped                                             2 garlic cloves crushed
fry light or low calorie spray                           400-500g chicken breast diced
150mls boiling water                                             4 tsp mild - medium curry powder
3 tsp chinese five spice                                          1 bay leaf
3 cardamons                                                                 1/2 tsp sesame seed oil
3 tbsp light soy sauce                                            chopped fresh corriander

Prepare mash potato by peeling and boiling 2 large potatoes, quarter these then boil until soft. Drain and mash, adding 50mls of chicken stock to make the mash very loose - bear with me all will be revealed.
Now for the curry, start by spraying a large frying pan with low calorie oil, add your chopped onions & garlic  and fry on a medium heat for 3-4 minutes until browned, add chicken breast and continue cooking until meat is completely sealed (white).
Next sprinkle a chicken stock cube over and add 100mls of boiled water, stir the pan and sprinkle curry powder & five spice over the chicken evenly stirring the pan to ensure no sticking, add cardamons & bay leaf and simmer for 10 minutes.  Add in the sesame seed oil & soy sauce and place your loose mash potato into a sieve and sieve this into the pan stirring continously, discard lumps left in the sieve.
Turn off the heat and sprinkle in chopped corriander and serve with rice
-If you like your curry extra hot, add chopped chillies with the chicken.
