Taste of Summer in a Jar

There's nothing quite like the taste and smell of homemade strawberry jam, from the second you open the lid you bring a little bit of summer into any of the seasons... there really is nothing like it taste wise and once you make it yourself and realise how easy it is and how much better it tastes you will never go back to shop bought...


Ingredients...

1kg Strawberries
1kg Sugar
Juice of half a lemon
Knob of butter

Method...
If the strawberries are large, cut them in half, Put the strawberries and lemon juice into a large pan. Heat for a few minutes to soften, add the sugar and stir over a low heat until the sugar has completely dissolved.
Once the sugar has dissolved and the liquid is clear, boil steadily for about 4 mins, or until setting point.
Set aside to cool for a few minutes and then spoon into clean and sterilised jars, seal and label.

Great for filling a Victoria Sponge, Gorgeous on hot toast with best butter.
Lovely gift as well and so easy to make
