Life Changing Tuna Salad

Ever since I posted my  Epic Chicken Salad Recipe, I've been integrating that general recipe into my life all across the board with the "salads" that you eat between slices of bread...or in this case  plantain chips

Anyhow, I was fully and completely enjoying my Epic Chicken Salad, minding my own business, when I went to Costco one day and they were sampling something very similar to my version, except with a few minor variations. 

1. They used straight up canned albacore tuna; no chicken. 
2. They served it on crackers. 
3. They used  Mojito Lime Seasoning.-->I didn't know this existed until that lovely day at Costco. 
4. They didn't incorporate grated zucchini like in my previous recipe. 

Anyways, if you think about lemon pepper on a baked piece of fish, this falls under the same sort of taste category. Except this recipe is much faster to make, requires zero cooking and I'd like to think extra tasty because it has a whole lime element going on that is unexpected. {If you eat this with tortilla chips, it almost tastes like you're eating them with those hint of lime tortilla chips you can buy! I love those things...}  

If you like tuna, or even if you think you don't, give this recipe a try. I had my 6 year old snarfing this down a few days ago...and she "hates tuna".

Drain and empty 2-12 oz. cans of white albacore tuna into a large bowl. I have these bowls and love them!   Chop some onion and dill pickles and add them into the bowl, along with some real mayonnaise, pepper and the Mojito Lime Seasoning.

Stir this up until everything is well mixed and the mayonnaise is evenly distributed. I used a  fork because it helped flake the tuna and incorporate it into the dish. You may need to add more or less mayo depending on how you like your tuna salad. I ended up adding even more seasoning to my mix because that's how in love with it I am, but feel free to make this exactly how you like it.

This is what the seasoning looks like that I got from my Costco. It's a seasonal item which is why I can't always find it at local grocery stores, but you can order it online in a snap!  

Recipe below. Enjoy!  Life Changing Tuna Salad Ingredients: 
  • 2-12 oz. cans white albacore tuna, drained 
  • 2/3 cup chopped dill pickles 
  • 1 small yellow onion, finely diced 
  • 1/2-2/3 cup real mayonnaise {depending how much you like} 
  • pepper, to taste 
  • 1 tablespoon mojito lime seasoning {or more if you really like it...which I do} 

Directions: 
Stir all ingredients together. Adjust mayo and mojito lime seasoning to your taste. Cover and keep refrigerated until ready to eat.
