The Basics

Making fairy cakes is simple, easy and fun to do. It's a great activity for young children to help with, as there is a lot of mixing they can take part in and also decorating of the cakes.

Fairy cakes are generally plain but can be covered and decorated with a huge array of edible goods. From flavourings, icings, sprinkles and butter creams to being filled with various jams and custards. Everyone has their own favourite!


Quantities to make 12 basic fairy cakes

For the cakes
100g self raising flour
100g butter, softened
100g caster sugar
2 eggs, lightly beaten
1 tsp vanilla extract
1 tbsp milk

For the icing
300g/10½oz icing sugar
2-3 tbsp water
2-3 drops food colouring
hundreds and thousands, or other cake decorations


1. Preheat oven to 180C/Gas Mark 4 and line cake tins with cake cases
2. Cream butter and sugar together until light and fluffy
3. Beat in egg, little at a time and stir in vanilla extract
4. Fold in the flour into the mixture, add a little milk until mixture is at soft drooping consistency. Spoon mixture into cases until they are half full
5. Bake in the oven for 8-10 mins, until golden in colour and/or spring back to the touch. Set aside to cool for 10 mins, then transfer to a wire cooling rack
6. For the icing, sift flour into mixing bowl, stir in enough water to create a smooth mixture, stir in food colouring
7. To ice the fairy cakes, drizzle the icing over the cakes, sprinkle with decorations and set aside until the icing hardens
