My family loves cheesecake. There’s no denying it, we are one cheesecake-lovin’ crew. We eat it at every family function, holiday and party you can think of. We have it at Thanksgiving instead of pie. We have it on birthdays instead of cake. 

I look for excuses to make - and have - cheesecake all the time. Like finding my favorite mini tart shells on special. They’re perfection for whipping up a sweet no-bake treat in a flash, whether you have a reason (your mum’s birthday) or not (it’s Tuesday).

You can use any topping you like, from blueberry to chocolate, but I’m partial to the classic - cherry. There’s just something about that creamy no-bake filling, all tangy and tart, combined with the classically sweet cherry pie topping. Completely irresistible as far as I’m concerned!

You really can make these Mini Cherry Cheesecakes in no time at all. All you need to do is give ‘em a little setting-up time in your refrigerator, and then you’re set (and so are they - har har). Take ‘em along to a party or eat them all yourself... I wouldn’t blame you if you did.

MINI CHERRY CHEESECAKES

prep: 10 minutes          yield: 24 mini cheesecakes 

INGREDIENTS 
24  mini tart shells 
8 ounces cream cheese, room temperature 
3/4 cup powdered sugar, sifted 
1 teaspoon  vanilla extract 
1 cup cherry pie filling 

DIRECTIONS 
1. Arrange mini tart shells on a baking tray. 

2. In a medium bowl with a  hand mixer, beat cream cheese for 3 minutes.  

3. Scrape down the sides of your bowl with a rubber spatula.  

4. Add in powdered sugar and continue beating for an additional 3 minutes. 

5. Add in vanilla and mix until combined. 

6. Spoon filling into a piping bag and pipe the filling into the mini tart shells. You can also use a zip-top bag. Just snip the corner and you're good to go.  

7. Top with cherry pie filling and refrigerate for at least 2 hours before serving.

Hand Mixer

Even though I adore my stand mixer, I don't use it for small baking tasks. This KitchenAid hand mixer is perfect for whipping egg whites and making cheesecake filling. The beaters are a breeze to clean and the entire unit takes up minimal space in my kitchen.

Piping Bags and Tips

If you’re just getting into cupcake baking, I’d recommend starting out with a  Wilton 1M tip. It was my very first piping tip and continues to be one of my most used.  A  cupcake decorating set is also perfect if you're just starting out.
