 Documentation if no documents ask if the watch has been checked out and by who.
Check the papers match the watch serial number.
Original box and booklets present.
Length of bracelet.
Sports models ask the bezel condition.
Condition of case and glass.
Timekeeping.
Has the watch case been refurbished.
Has the watch been serviced and pressure tested. 

But please remember watches are like cars they are expensive to keep in the dealer network as they get older and finding an older watch without rolex service is not the end of the world.
It costs 150-250 sterling to have a good watchmaker service your Rolex.
Documents also get lost and misplaced over time as long as the watch can be verified and the missing documents reflected in the purchase price then consider such a watch.
Always check the papers match the watch i have seen a few over the last 30 years that have been mixed up at some point.
Buying a watch from a seller who is open and honest with good feedback should be a rewarding experience.
