Nous vous proposons ici un lobe entier de (+/-) 600 g. 

 

 

Nous avons acquis pendant de longues années l'expérience du fumage de produit tel le Saumon ou le Foie Gras. A partir des meilleurs éléments de nos fournisseurs, nous pratiquons une technique artisanale qui laisse au Foie Gras toute sa finesse et son onctuosité et où le parfum 'fumé' n'est là que pour souligner la qualité de la chair.

Ce Foie Gras de Canard Fumé est préparé artisanalement dans des conditions rigoureuses d'hygiène mais selon les méthodes que nous élaborons depuis de nombreuses années.

Le foie de canard, entier et cru, est fumé pendant quelques heures à froid (température de la fumée: 26°C au plus) à partir de sciure de bois de hêtre, temps assez court qui évite le goût dominant acre et fort du 'fumé', lui gardant toute sa finesse et lui donnant cette saveur délicate exceptionnelle et rare qui étonnera les amateurs les plus avertis.

 

Il est à déguster, d'abord, tel quel, en fine tranche.

Nous joindrons à votre colis un sachet de mélange de Sel de Maldon en cristaux et de poivre de Séchuan torréfié par nos soins; ce mélange est à mettre sur la tranche de foie gras de chaque convive, il amènera une touche originale et révélera toute la saveur du Foie Gras de Canard Fumé.

 

Ensuite, vous pouvez l'utiliser comme vous le feriez avec un foie gras cru.

Par exemple, une fois découpé, saisissez chaque côté de la tranche quelques instants sur une poêle très chaude sans autre matière grasse et avec, en fin de cuisson, un léger déglaçage au vinaigre de Banyuls. Salez et poivrez. Le parfum de ce foie gras poêlé, apporté par le fumage, est exceptionnel et sa tenue, en cours de cuisson, parfaite.

Si vous confectionnez vos propres terrines de foie gras, n'hésitez pas aussi à utiliser ce foie fumé: un régal ! (réduisez alors votre temps de cuisson de 20%)

Recette "Papillotes de Foie Gras Fumé aux Épices" :

Il vous faut 300 g de foie gras de canard fumé,

Essuyer le foie gras dans du papier absorbant.

Le couper le en 4 tranches épaisses.

Mettre 2 cuillères à soupe de farine dans une assiette creuse et fariner les tranches de foie gras en les tapotant pour faire tomber l'excédent de farine.

Dans une autre assiette mélanger 4 cuillères à soupe de paprika et 1 cuillère à soupe de piment d'Espelette puis poser les tranches de foie fariné dans ce mélange; les retourner plusieurs fois pour bien les enrober. Saler et poivrer sur les deux faces.

Préchauffer le four à 240°C (Th.7).

Découper 4 carrés de papier sulfurisé.

Les étaler sur le plan de travail et poser 1 tranche de foie gras sur chacun.

Fermer hermétiquement les papillotes en repliant les bords du papier sulfurisé.
Placer dans la lèchefrite ou dans un plat à gratin; enfourner et faire cuire 5 minutes.

Servir immédiatement avec des tranches de pain grillé
