A note about Foie Gras:
Foie gras is a very popular gourmet product in French cuisine. Its flavor is described as rich, buttery, and delicate. It is sold whole, or it is prepared into mousse, parfait, or pâté, and may also be served as an accompaniment to another food item, such as steak.
Traditional low-heat cooking methods result in terrines, pâtés, parfaits, foams and mousses, often flavored with truffle juice, mushrooms or brandy such as Cognac or Armagnac. These slow-cooked forms of foie gras are cooled and served at or below room temperature.
In traditional French culture, foie gras is considered a luxury or gourmet dish. It is mainly consumed on special occasions, such as Christmas or New Year's Eve dinners, though the recent increased availability of foie gras has made it a less exceptional dish and therefore, in some areas of France foie gras is enjoyed year-round.
