What Is An Improver?
There are two main reasons for the use of bread improvers: to help produce gas, and to retain the gas inside the bread. This is done by including naturally produced enzymes to act on the yeast and gluten.
Improvers aim to boost the amount of enzymes artificially, thereby increasing the amount of fermentation early on in bread production.
Improvers strengthen the gluten, thereby giving the bread a better structure and a softer crumb, with increased volume caused by better oven spring.
As you only need to use a very small amount of improver per mix (usually a ratio of 1% for white flour and 2% for others, eg 100g white flour + 1g improver, and 100g brown flour + 2g improver and so on)
