This animal rennet is the original material that has been successfully used by cheesemakers for thousands of years! It is extracted from the stomach of the calf and is available in a highly concentrated form. It is GM free and is suitable for the production of all types of cheeses.

This rennet is industrial strength and should be added at a rate of 4 drops per gallon (4.5 litres) of milk to produce an excellent soft cheese. It may also be pre-diluted with a little cold boiled water to assist when dosing smaller quantities.
A basic soft cheese recipe will be included with any order.
This rennet will be sent with a six month shelf-life stamped on each bottle. This is a legal requirement and has to take poor storage conditions into account: if the product is stored in the fridge at 4C maximum then the rennet should last much longer. We have performed some trials with rennet that was properly stored, but well over 2 years old. It still worked perfectly...
It may also be used for making junket, although it will need to be diluted first because of its high strength. We received the following information from one of our customers:
"Hi there, as promised I would update you re the use of the animal rennet on the making of 'Junket'. Your rennet arrived yesterday and thanks again.
Today I added 1.5 drips from the bottle to one pint of Jersey gold top milk and 2 table spoons of brandy. This was set firm within 3 hours. Topped with nutmeg it was Excellent. There was no 'wigging', when you took out a spoonful of junket (as with the essence variety) and it stayed set up to the last spoonfull, that unfortunately arrive too soon. From my parents "Junket like we use to get". We are all sold on your product."
