Okay, I'm a massage therapist, so I recommend actually massaging the herbed olive oil into the skin of the Turkey. I'm also a Farmgirl, so I recommend picking or purchasing a very large bunch of fresh herbs like sage and savory. Wet them thoroughly, roll then into a ball and stuff your Turkey with them for essence. The scented moisture turned the internal Turkey into an herb sauna! Outside: browned superbly and crispy...Inside: cooked to the bone and juicy through and through. Even leftovers stayed juicy and tender for a few days!
