As a professional chef, working in busy kitchens for many years, I have seen recipe books come and go. Most of them are used as a base for ideas and then you will expand on them. Only very few stay around and are used as the basis for gaining new knowledge, Ballymaloe Cookery Course is one of them. I have always admired Darina Allen as a chef, and whilst most of the chefs I've worked with will talk about the latest recipe from 'celebrity chef' none of them know who Darina Allen is. Once you open this book and start reading, you will struggle to not start trying the recipes. More than that, you will start saying to yourself 'oh, I never knew that', or 'wow that's a great idea'. This book will give you a fabulous basis for your own culinary adventures. It is informative and full of great recipes and also gives you a firm grounding to a world of catering knowledge, tips and techniques, as well as teaching you to respect the food you are using. Used properly it will take you on the sensory adventure of cooking. This is most definately a book you should have, if you are serious about cooking.
