This is an excellent, classic cookery book which... anyone interested in the best ways to cook pork and to make pork products should own. The recipes for salting and preserving are particularly helpful, and a great deal better than many in more recent books, which suffer from using far more salt than is necessary, resulting in unpalatably salty outcomes. Grigson refers to the publication Home Curing of Bacon and Hams (Bulletin 127 from the Ministry of Agriculture, 1945). I found a copy on Ebay. It is also a very helpful (and historically interesting) document. The index and the cross-referencing could be better,but those are minor drawbacks.
