I was very impressed by the explanations of the how and why of Chinese cooking. The (few) utensils needed are explained and justified, (Most of) the interesting ingredients are well explained. This makes a lot of sense of any chinese recipe that I might find. So I'm pleased I now have this on my shelf. Am I about to start using the recipes? Er, well, when I get a moment, yes. But not today!
