Making Quick and Simple Vegetarian Recipes

Cooking quick and simple vegetarian recipes has never been easier. Even, if you find the thought of cooking a meatless dinner from scratch a little daunting,  you can alway try supermarket ready meals first. Recognizing the popularity in vegetarian cooking, many stores, supermarkets and companies have come up with a variety of creative dishes that cater to many people's tastes.

Even if you're not vegetarian, many meatless meals, which are rich in vitamins, minerals and fibres, can serve as healthy nutritional supplements to your diet. Additionally, they can be seen as a healthy and low fat alternative to traditional foods.

Cooking Healthy Vegetarian Recipes for Kids

Any parent knows that children can be particularly fussy in their eating habits, especially when it comes to vegetables. However using cheap and easy vegetarian recipes, parents can subtly introduce vegetables into a meal, and can even make kids enjoy eating them.

For example, choose a meal that you know is a family favourite, such as lasagne or Spaghetti Bolognese, and then substitute the recipe for a meat free version. You meal doesn’t have consist entirely of vegetables. You can use soya-based equivalents, which can be bought from many health stores or any of the popular supermarkets.

Below a few easy vegetarian meal ideas to help you get started.

Cream of Tomato Soup


1 lb. Tomatoes.
4 oz. chopped Celery.
2 medium-sized Onions.
2 oz. Butter or Margarine.
1 Bay Leaf.
1 dessert spoon of Corn Flour.
1 ½ pints of Water.
1 clove of Garlic.
1 Vegetable Stock cube.
Salt and Pepper to taste.


Chop up the vegetables, add the herbs and fry for 15 minutes in the butter. Stir in the corn flour until smooth, then add the water and simmer for 1 hour.

Cool slightly and then process the soup in a food processor or blender until smooth. Pass through a fine sieve into a clean saucepan.

Add the seasoning to taste and heat gently for another 5 to 10 minutes. Serve with fried croûtons of bread. 

Tomato Cream Eggs on Toast


1 oz. of Butter.
1 teaspoon of Flour.
½ cup of Milk.
½ cup of Cream.
2 Beef Tomatoes.
4 hard-boiled or poached Eggs.
Salt and Pepper to taste.

Method :

Fry the tomatoes in the butter, add the flour and stir well. 

Next add the milk, cream, salt and pepper. Cook for 10 minutes. Process the mixture in a food processor or blender until smooth.

Put the hot eggs on to a slice of toast. If hard-boiled eggs are used cut them in halves. Pour the processed mixture over the eggs on toast. Grill on high for a few minutes to get thoroughly hot.
