At least one person I know has fallen foul of this. Someone wins your auction and pays through PayPal. They insist that signed-for delivery is too expensive and that the item should be sent through the normal post. They then claim that the item was never delivered and PayPal immediately give them the money back with no investigation or redress; they simply lift the cash from your account and give it back. The crook then has your item AND your cash.
Simple but effective!
My advice? Send it signed-for anyway and pay the difference yourself, especially if it's a small valuable item.
Paypal Con - always sell with signed-for delivery!
