I bought this thinking it would take the guesswork out of making fudge. I usually drop the caramel into cold water to determine when it is ready. Today I used the thermometer to tell me when it was at the required temperature. Unfortunately the mixture burned before I was anywhere near the right temperature. Perhaps I didn't hold it in long enough but I was being splashed by hot sugar. The mixture also tended to stick and burn as I could not stir it while I had the thermometer in it.
