I do a lot of baking for a needy children's food program The Covid pandemic has created many families without resources and our local food bank is overwhelmed. Instead of making muffins, I now make mini cakes, with added protein to ensure the children and their parents and siblings get something tasty yet nourishing. I use splenda instead of sugar.
