And, I have found myself referring to this "Cajun Bible" when using other recipes for product substitution and cooking variances. My book arrived today, and I have not been able to put it down! I gave John Folse's "After the Hunt" (the only one of his three available at the time)as two Christmas gifts (2009) and recommended it to two others, both of whom purchased it for gifts for hunters and fishermen. Each of the four men that I know who received their book was more than delighted! They loved the pictures, the research, the recipes and the ease of reading the book; they also loved the size and the fact that they can use it in their homes as a "coffe table book." I am in total agreement with them on my book which includes "all things Cajun." In fact, I used a pasta & shrimp recipe for dinner for my husband and me tonight! It was delicious! I plan to purchase Folse's newest similar book--"Hooks, Lies and Alibis" in the near future. I chose the Encyclopedia because it includes not only meat but seafood and vegetable and game recipes. I think any one of these books is a real steal at the price they are selling for! Am I a professional cook? Exceedingly excellent content. Historical, educational, informational, instructional. Quite fascinating and interesting to pore over the pages about the beginnings of Cajun and Creole cuisine and to learn the recipes and cooking techniques to prepare it from a local chef. The pictures are wonderful, both of the food and of Louisiana and its history. Only reason that I didn't give the product a 5 is that this truly is an encyclopedia, as its title states, and the book is large and heavy: 10 pounds and 12.25 x 10.5 x 2 inches. However, I'm learning a great deal and already am a better cook because of this book.
