  • Making & Using Dried Foods book

  • great recipes - some mis-information

The recipes are fantastic and very precise - the book is very orderly and alaphbeticaly organized - Being an avid dehydrator user I noticed some information is incorrect within the steaming blanching area - ex. pg 86 white potatoes "blanch in steam for 6-8 mins" This is a bit too long for blanching (potatoes will be cooked and flakey) I've found - a better time is 3 1/2 mins. All in all the book is well worth the small price for the information and recipes- Steve
