Thanks for the additional instructions.
I had to first build a bootable USB with OS-X Catalina, then perform a full Time Machine backup for preparation.
Then fit the new SSD into my laptop, power up with Option+R key boot, use Disk Utility and format the new SSD, install Catalina, update to whatever final OS-X version, then use Migration Assistant to restore the Time Machine backup 😀
