    I have been cooking Cajun and Creole dishes for over 35 years and this book is the bestI have ever found! There is no part of Louisiana cooking that you can not find here. Over the years I have relied upon Emeril Lagasse and Chef Prudhomme for authentic Cajun & Creole recipes, but this book not only gives recipes, but background and history, as well. And, I have found myself referring to this "Cajun Bible" when using other recipes for product substitution and cooking variances.     Exceedingly excellent content. Historical, educational, informational, instructional. Quite fascinating and interesting to pore over the pages about the beginnings of Cajun and Creole cuisine and to learn the recipes and cooking techniques to prepare it from a local chef. The pictures are wonderful, both of the food and of Louisiana and its history. Only reason that I didn't give the product a 5 is that this truly is an encyclopedia, as its title states, and the book is large and heavy: 10 pounds and 12.25 x 10.5 x 2 inches. However, I'm learning a great deal and already am a better cook because of this book.
