Just sprinkle some flour onto it, roll out your pastry dough, use the circle guideline to measure the size crust circle you will need and then trim it. Now this is the best part. To ease the dough up, simply lift the edge of this mat at the corner and lift the dough circle from its corner, up and away from the mat --- with no sticking !!! So easy. Plus the mat TRULY does lie flat on your counter -- without moving -- as you roll out the dough upon it. It also enabled me to roll the dough out very thinly. which was a desired effect. This is a qualty product. It makes it easy to roll out my pie crust. Its easy to clean and I just hang it up to dry. Be careful not to get near it with anything sharp. It doesn't resist cuts very well. I have never used it as a baking mat so I cant speak to that. Overall I really like this product and use it often.
