I use this for baking as I bale gluten free and also bread from spelt flour. Lack of gluten makes cakes and bread too crumbly and they fall apart when cutting slices, most annoying. A little sprinkle of Xanthan gum stops the problem and makes baked products stay together and easy to slice. You need very little though, half a level teaspoon mixed with dry yeast in a 1 kg dough, so it is very little indeed. For a normal size gluten free cake also half a teaspoon, gluten free flour has no gluten at all as it says on the box.

If youre fed up of Gluten Free cakes and pastry falling apart then this appears to be the solution. It sounded expensive but you only use a 1/4 tsp in a cake mix with 200g GF flour and it works! No taste either. Im amazed. The only thing i want to know is what would happen if I added LOADS? Would it turn into clay? .... maybe I'll try one day!
