After seeing several recipes for preserves inspired by Ms. Ferber, I decided I must have this book. I'm not disappointed. Obviously, Mes Confitures was not written for an American audience. While there are many ingredients specific to Ms. Ferber's area in France that I can't reasonably obtain, this book is still an invaluable source of inspiration for preserves using ingredients local to me. Also, the book does not include procedures for waterbath canning that are recommended by the USDA; but most the the recipes I've reviewed would easily adapt. If you're looking for a book on preserves that you can follow the recipes and procedures to the letter, this may not be the one for you. If you are looking for some amazing inspiration for creating flavor combinations, you absolutely must buy this book.Read full review
For those not familiar with making jam, I'd advise them to read the intro, otherwise final instructions are not repeated for each recipe page. But lovely, I am pleased to add this to my recipe book collection.
