All the flour available from local supermarkets contained Calcium Carbonate aka CHALK. I thought that this, being a high quality, local flour would be pure. Sadly, it too contains chalk. Horrified, I searched the regulations for permitted adulteration of flour . I found that the government has made it illegal to sell flour with LESS THAN 0.2% CHALK added! This happened in Victorian times too, but in those days our government protected us. Thank you anyway. Please show the %CaCo3 in the flour.
