I am so glad this book cought my eye! What a find! I have now tried a number of these recipes and compared them to dishes that we had eaten in some little towns on a recent trip into Mexico. These recipes brought us right back! From the street stand Gorditas to the most detailed Moles, these recipes are in here. Want to learn techniques, there are "Cooks notes" on almost every page. I believe that I was an adult when I first tasted Mexican cooking, now, were hooked! I wish that I bought this book 21 years ago! If you are interested in Regional Mexican cooking, you will need this in your collection.
It has indeed authentic recipes but they are too authentic for an average cook. It requires many different peppers that I do not carry at home. The recipes have long lists of ingredients that for me, a senior citizen can't face at the end of a difficult day.

We made the Charcoal-Grilled Corn with Cream Cheese & Chili sauce late this summer when I first received the book and I can't wait to try more dishes! If you are a new-comer or old hat at Mexican dishes, this is one of the best reference books you can have around.
