    I have used this book for over twenty years. I usually only make sausages in the summer when I am in Alaska. For the past six years I have been doing more and more meat processing during the winter while I am in Florida. I needed this book in both places,I found one one Ebay at a great price. It was in Excellent condition, like it was never opened. What a great deal, since this is a great book. With this book, you have a place to start with any sausage you might want to make. Ad a few things make it your own recipe. I do..

    Fairly good book. Heavy in history and hygiene. I hope the hygiene lessons sink in to readers who may not have restaurant experience. Nice amount of recipes included, but author is a bit liberal with the salt for my taste. I reduce the amount he recommends by 25%. Materials like casings or pork bellies may not be available in some areas but can be ordered via internet until TSHTF.
