    Lovely

    Small batch Italian artisan cheese ensuring quality via attention to detail. Smooth and light flavour with good texture and taste. The truffles don't overpower the taste of the Caciotta, which should be light and appreciated for what it is. The cheese should be allowed to breathe and reach room temperature so as to fully release its natural flavour and aftertaste which would otherwise be lost if chilled. Being a light cheese, care should be taken to accompany it with a fruity white wine, rustic breads and good, spicy meats such as salami, chorizo, etc as a counterpoint. As with all foods I consider tastes subjective however, I find this Caciotta to my liking and have no hesitation in recommending it to other "Foodies" for their delectation.
