The memory of it is so magical, you simply must make it for yourself; what do you do? Oh, twenty years later, I am still buying every Hawaiian cookbook I come across, looking for two dishes I can’t forget: Hula Pie and Sweet Potato Fritters. The joint on Maui that these delectables were created at is no more. What shall I do? “tasting Paradise” can help you out, if you too are suffering from a loss of a beloved food, and are looking to make it at home. All islands are represented here. It’s not just the fantastic Hawaiian Pacific Rim dishes, but there are American Continental, Italian, Classic Cuisine, and many more restaurants’ specialties to be found. Besides a glossary, recipes are found by category and also by the restaurant name. Delicious, or as they say in Hawaii: ONO! Would you like a small peek? Here’s one of my very favorites: Bangkok Houses ~Thai Cuisine Tom Kha Gai- Coconut soup ½ pound Chicken chunks ½ can Coconut milk 2 cans Chicken broth 1 sprig Lemon grass 3 med. Hot peppers, diced 2 Teaspoons Fresh fish sauce (nam pla) 6 teaspoons Lime Sauce or juice ½ cup mushrooms (I suggest straw mushrooms, canned) Cilantro for garnish Boil chicken in broth until tender, add ingredients in order listed. Yield: four servings You will be asked for seconds, so I would double or triple the recipe. The recipes are simple enough to replicate, and easy to understand. Naturally, these restaurants aren’t going to give out their trade secrets, but I have to say these are close enough to get you through those tough food withdrawals…. Alas, still searching for Hula Pie and Sweet potato fritters that are JUST right…. And of course, the PERFECT Mai Tai, but that’s another review. Aloha, and Mahalo!Read full review
