I found Mimi Kirk on youtube.com while browsing around looking for raw food videos, after going on Dr. Joel Fuhrman's Eat to Live diet and losing quite a few pounds, and feeling so much better. I was looking to add more raw food recipes. The first video I found on Mimi was about winning the most beautiful vegan over 50 contest. When I saw that she is my age and how fantastic she looks, I knew I wanted to know more about her. I watched everything on her and bought a dehydrator because of her! I wanted to make her kale chips and crackers. I find Mimi a fascinating personality - so warm, friendly and enthusiastic. She's inspiring. So, of course, I wanted her book! And I'm finding that I like it even more than I thought I would. Not only is it full of wonderful recipes but she also writes about how to go about getting more raw food in your diet, the benefits, the processes and delights, what to expect, the reasons to do so, her philosophies, the tools you'll need, body care techniques, etc. It's a pleasure to read. Of course I haven't made everything in the book, but those recipes that I have made are easy to make and tasty. I love the pizza crackers and the corn chips, zucchini hummus and tomato soup and corn soup. The almond meal cookies are fabulous. The photos are wonderful and the recipes are surprisingly easy to make! And bonus: they're good for you!Read full review
