    I found this book to be the best on the subject. It starts with the basics and then rises to some of the best recipes on the subject I have ever read and tried. I enjoyed the background on smoking fish and trying the great ways to prepare fish for tickling my taste buds. I have been a chef for 30 years and I learned more tricks about smoking fish than I ever read before. You should have this book in your cooking library and refer to it each time you smoke fish. If you think you know about smoking fish.... You don't know Jack!

    This is perhaps the most authoritative book on the subject that I have ever tried to work out of. You can't go wrong with this book if treating meats is your passion or taste. I would most highly recommend this book to anyone out there that is dealing with this subject matter. I buy these books to give to help friends.
