The rounded bottom and enamel coating makes it easier to remove mince pies. Any spills were easy to remove after soaking in warm water. I did find it easier to seal each pie by tamping the edge with the rounded end of a handle. When I made goats cheese and onion chutney pies they tasted great but the vinegar from the pickle marked the enamel. Keep away from acid foods. From a very happy customer.
