I've played with several different yeasts, now. What I look for is flavor and convenience. I say this because certain recipes call for proofing in the refrigerator, and some yeasts work better than others. I have played with some organic yeasts. If your tastes run to a strong yeasty smell and taste, this is probably the way to go. However, you do sacrifice convenience. They must be started in warm water before mixing with cold ingredients and I have had mix results when proofing in the refrigerator. That said, they do a great job at room temperature and I get really good rises out of them. The other way is instant or rapid rise yeast. These are easy. Just dump and mix. Temperature is far less of a concern. I highly recommend the Fleischmann's for a couple reasons, convenience being one of them. The other is dependability. One of the other problems I found, particularly with organic yeasts is that they have a limited shelf life, so you have to order them in small quantities. The Fleischmann's I can store in the refrigerator and its still going good after six months. That means I can order larger quantities, which saves me time, trouble and constant reordering. And best of all, it's dependable. I have yet to have it fail on me. What really sells me on this product, beyond the fact that I get good, consistent rises out of it, is its yeastiness is not overpowering. I like the smell and taste of yeast in my bread and yeasted pastries but I also want to taste the bread and pastries, too. This I would rate as a medium strong yeasty smell and flavor, which, for me is just perfect. It gives me the best of both worlds. The other thing I should mention is starters. I don't like strong sourdough flavor like the San Francisco Sourdough starters. To me, all I taste is the sour. Again, this yields a medium sour with starters, which is exactly what I like. Good for Jewish Rye or Corn rye. Great for Pugliesi. I highly, highly recommend this product for anyone who likes consistency of rise, dependability and convenience, and doesn't want an overpowering yeast smell or taste in their breads and pastries.Read full review
