So..made a stater culture up with the GV13 24 hours or so before I wanted it and then pitched it into 23 litres of fresh pressed, un-pasturised apple juice. It's completely suppressed any native yeasts / bacteria and it fermenting away with a fury. Fermentation is still ongoing, but there are no 'off' tastes and it's vigorous and healthy. I'd absolutely buy this and use it again.
