Excellent book, 75 recipies for soft and hard cheeses also several recipes for acid curd cheese. It also covers goats and sheep milk aswell as other milk products like butter and yoghurt and has recipes to make with the cheese you've just made. Explains some of the science of cheese making without getting too technical. Although its not filled with beautiful photographs it is filled with usefull information about equipment, procedures and has some handy trouble shooting pages at the back. The book is published in America and I assume quantities given are american gallons and quarts.
