I bought this because I struggle to get a really even edge if starting from scratch. If you follow the instructions, and take care to draw the blade steadily through the machine you will end up with a very sharp blade. This is achieved quickly- I would be twenty or thirty minutes to get an inferior edge on my stones. I would say the machine's sharpness would satisfy most, but it is possible to take the blade one step farther using very fine stones. Of course this is labelled 'Asian', ie 15 degrees, but you don't be afraid to reprofile your knife to this angle, it takes no longer, and I've found the edge to be long lasting, indeed Wusthof choose this angle over the more common (for western knives) twenty degrees. Of course there are other models that allow you to choose between these angles, or just sharpen at twenty, but this was the cheapest machine, and I wasn't sure just how effective they would be.
Providing this machine lasts (and the guarantee looks good) it will be worth every penny, I enjoy sharpening knives, and have all the stones, but if you don't, and just want factory sharp edges, this is for you. Don't be worried about losing lots of metal either, once profiled I think you would only need a few passes through the finer wheel when sharpening, and a ceramic hone keeps my knives razor sharp on a daily basis. This way you should only need to sharpen every few weeks, barring accidents- my chef knife is showing no signs of needing re-sharpening, three weeks of daily use later.
