Sichuan Peppercorns
Sichuan pepper's unique aroma and flavour is not hot or pungent like black, white, or chili peppers. Instead, it has slight lemony overtones and creates a tingly numbness in the mouth. Anyone who likes Chinese / Cantonese cuisine will like this added to certain dishes. My personal favourite is mixed Sichuan Vegetables, which uses this ingredient. It is best lightly dry roasted, (about a teaspoonful), over gentle heat, and when it starts smoking slightly, grind immediately, and add to your cooking oil, before putting in the other spices & vegetables. Stir-fry, then enjoy with rice.
