A nutrient rich gluten free alternative to refined, starchy flours, Teff is high in iron, magnesium and a good source of calcium. Compared to other grains Teff has a higher ratio of bran and germ which allows for its high levels of dietary fibre. Allergen free and vegan, grown by small-scale Ethiopian farmers, who to this day harvest with ox plough, a tradition unchanged for thousands of years.
