I've been looking for something like this for ages. I bought the mats to drain the whey out of newly made blue cheeses. There are several ways to use these to do this job - spread the mats out on a stainless steel table, then put each cheese mould onto the mats and start filling with curds, the whey will drain easily through the holes in the bottom of the moulds and away through the mats which hold the cheeses in the moulds away from the table surface. When at the stage when you can take the cheeses out of the moulds, you can use the mats again but has to be in conjunction with a bespoke cheese mat which has smaller holes. This allows more draining of the cheeses. The mats are easily cut with scissors if you need to have different different sizes. Very good product, thanks very much!
