Very good book but could be more informative to amateur chocolatiers
This book is beautifully presented and highly informative regarding the origins of chocolate. My only disappointment is there is a lack of advice and tips for chocoholics who like to make their own chocolate from scratch (I prefer to use cocoa instead of preparing beans, for convenience). I have recently started making my own chocolate due to an allergy to cow's milk and refined white sugar and whilst it tastes just as good as commercially made products, I find that I can't get the texture quite right. By reading this book it appears you need expensive, industrial type machinery to achieve smooth chocolate. I'm not sure how you would "become a bean to bar expert" without the funding and room space to obtain the required equipment.Verified purchase: YesCondition: New
