Slow start, but seems to be forming new scoby after 3 days.
The amount of starter tea was smaller than I'd hoped. I followed the very clear instructions to make a 2 litre batch, and used black tea. The recommended 30 minute brew time lead to a very dark tea. For two days it was hard to tell if anything was happening. There seemed to be a thin translucent layer on the surface, but it was really hard to be sure, due to the darkness of the liquid. It is now 3 days after starting and I can finally see a thin white layer from the side of the jar, see photo. Also a few small bubbles have appeared. So hopefully all is OK. It might have been better to make a 1 litre first batch, given the small amount of starter tea I had. Maybe less brew time for black tea too? NB I did not move the jar or take the cloth off the opening to take a better look. I wanted to allow the surface layer (scoby) to form without disturbance. Looking into the top of the jar might have shown progress sooner? But I stayed patient.

It came well packed with enough starting liquid to make about 3 liters brew. The scoby was healthy looking and had a good vinegary smell, as it is supposed to. The tea started to change color in 1 day and the brew was ready in one week for a sweet kombucha, while a less sugare brew would take longer. Kombucha starter withScoby
I’ve mixed feelings because although my SCOBY arrived quickly and well packaged it only had a teaspoon of starter liquid with it, and most recipes say you need to start with a cupful. I realize it may not be practical to do that but I did expect more than that. The SCOBY was a good size although quite a dark color. Anyway I made my tea according to the instructions that came with it and left it for a week to do it’s’thing’ before tasting it. It had grown quite a few yeast strands, but the new ‘baby’ SCOBY was less than a ml thick. I left it for 2 weeks plus tasting with a straw every couple of days after the first week as it still just tasted like sweet tea! When it got a more tart vinegary taste I started the 2nd fermentation and bottling. As this was my first venture into making Kombucha I wasn’t sure if it turned out right or not , especially as the baby SCOBY didn’t develop.Was there insufficient starter liquid... was the SCOBY poor quality? My tiny very thin baby is in some starter liquid from my first brew hoping it may grew or another SCOBY develop. I’ve started another batch with my original SCOBY and fingers crossed hopefully may get a better result, if not I’ll need to get another SCOBY as this one may need retiring. My bottled brew I made up different flavours and to my inexperienced self taste ok, slightly fizzy and quite tart. I’d not tasted kombucha before so I don’t really know how it should taste as I was making it for the probiotic benefits ( maybe I should buy a commercially made one to get a better idea of how it should taste) Anyway as I said I think It should have had more starter liquid but I’ll need to see how the 2nd batch turns out before I can tell for sure if I need to change the SCOBY. 😔

Large healthy scoby
