The only minus about these bags of flour is that they generally puff out a bit of flour, suggesting they are routinely not completely airtight but I think that's the price you pay for a fully recyclable paper bag? I use this flour often to make a range of vegan burgers with consistently chewy results which you can't get any other way that I know of. High in protein but high in gluten if you need to know that.

As a professional baker, I know that some wheats have lower protein levels than others, I wanted the vital gluten to boost the protein/gluten level in spelt flour, a ratio of 1% does this nicely and gives me the desired shape loaf that I wanted, especially oven bottom bread, where there isn't a tin to support the sides of the loaf. if you are using older varieties of wheat, then they don't have as much protein as the modern varieties, which can give you a flatter loaf, rather than a bold loaf, so for these types of flour, Vital gluten is a must to achieve the end result you are after, it is a bit expensive, but as you only need a little to achieve the end result and if you are not making 5 loaves a week, I suppose it is OK.
